Vegan Patacones

Here’s What You’ll Need

Ingredients:

  • 1 Green plantain
  • 1/2  avocado smashed
  • 1 cup rucola

Pico de Gallo:

  • 1 diced tomatoes
  • 1/2  diced onion
  • 1 tbsp lemon juice
  • 1/4 tbsp chopped garlic
  • 1/4 tsp salt
  • 1 tbsp chopped parsley
  • 1 tbsp chopped coriander
  • 1/2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1 cup canola oil

DIRECTIONS:

  1. Peel the green plantain and cut it into four pieces.
  2. Put the canola oil in a pan on medium heat and wait 3 min
  3. Fry the plantain pieces on all sides, then take them out and smash them into flat pieces
  4. Put the flattened plantains in the pan and fry each side for 1 minute. Place them on a plate and sprinkle a pinch of salt on top.
  5. Mix all the ingredients for pico de gallo in a bowl. 
  6. Place on top of each plantain the rucola, the pico de gallo, and mashed avocado
