Pumpkin Pecan Cookie Recipe

Cookies are always going to be a crowd-favorite which is why we created this delicious vegan, gluten-free, refined sugar-free, pumpkin and pecan cookie!

Here’s What You’ll Need

1/2 cup coconut oil

1/2 cup pumpkin puree

1/2 cup coconut palm sugar

1 tsp vanilla extract

1 1/2 tsp cinnamon powder

1 tsp ginger powder

1/4 tsp allspice

1/2 tsp himalayan salt

1 cup pecans

2 cups of gluten-free flour blend

1/2 cup shredded coconut (to roll in)


  1. Pre-heat oven to 350 degrees F. Line a cookie sheet with parchment paper.
  2. Light roast pecans until fragrant on low heat. Remove from heat. Finely chop the pecans.
  3. Add coconut oil, pumpkin puree, coconut sugar, spices and salt and mix until light and fluffy. Use either a high speed blender or electric mixer. Gradually add chopped nuts and flour until well blended.
  4. Shape cookies into 1 inch balls or press flat to form a traditional cookie shape/size.
  5. Leave space in between cookies on the parchment paper for baking. Bake 14 – 15 minutes until bottoms look slightly brown.
  6. Allow cookies to cool at least 5 minutes before removing from the parchment paper.
  7. Roll balls or dust cookies with the shredded coconut.

Although with our cookie recipe – it’s unlikely to get stored anywhere else but immediately in your belly!
