Here’s What You’ll Need

6 cups water / divided

2 – 3 tbsp agave

2 tsp lemon or lime juice

1/2 cup tapioca pearls

1 tbsp dried chamomile flowers or 2 tea bags

1 tbsp loose leaf green tea or 2 green tea bags

8 peaches

DIRECTIONS:

  1. Bring 3 cups of water to a boil. Add the pearls and stir.
  2. Reduce the heat and simmer for 25 – 30 minutes.
  3. Turn off the heat and let it sit, covered for another 30 minutes until pearls appear translucent.
  4. Add the additional 3 cups of water to a large glass jar or vessel. Stir in the agave.
  5. Drain the pearls well and rinse them once they are done. Add them to the cold glass/jar of water.
  6. Sit in the fridge until ready to use.
  7. Bring enough water for 4 cups of tea to a boil. Let it cool slightly and pour over tea bags or steep herbs. Leave for 10 minutes. Discard bags or herbs.
  8. Peel the peaches and add them along with 1 tsp of lemon or lime juice to a blender and blend on high until completely creamy and smooth. Small increments of water may need to be added to aid in the blending process.
  9. To serve the tea; place the desired amount of pearls in a serving jug or prepare individual glasses. Half herbal tea, half pureed peaches.
  10. You can add a splash of plant milk and whisk to combine.
