Here’s What You’ll Need

Ingredients:

  • 95ml water
  • 1.5g/0.25 tsp salt
  • 150g/1 cup flour
  • 50g/1/4 cup vegan cheese
  • 30g green onion, chopped
  • A pinch of baking soda
  • 1/4 cup flour
  • 1/4 cup cornstarch
  • 20g vegan butter
  • 2 tbsp olive oil for frying

DIRECTIONS:

Dough:

  1. In the mixing bowl, mix water with salt until combined, and pour the flour into the mixture.
  2. Knead the mixture with your hands until it forms a dough. Cover and rest for 10 minutes.
  3. Divide the dough into 4 pieces and shape each piece of dough into balls. Cover and rest for 10 minutes again.

Filling:

Place the chopped green onions into a bowl and add a pinch of baking soda. Prepare the cheese next to the green onions.

Dust flour:

  1. In a bowl, mix cornstarch and flour.
  2. Sprinkle some dust flour on a large cutting board, take a piece of dough, and then flatten the dough with your hands and roll out the dough with a rolling pin until about 18 cm in diameter.
  3. After rolling out the dough spread some of the dust flour on the top of the dough. Repeat with a second piece of the dough.
  4. Stack the dough on top of the first dough and spread some dust flour. It’s very important to spread the dust flour mix so the dough doesn’t stick.
  5. Repeat with the remaining pieces of dough. Then roll out the dough. Flip the dough over while rolling it and roll it out more until about 28 cm in diameter.
  6. Peel the dough pieces apart gently.
  7. Microwave the salted butter for 15 seconds.
  8. Brush the melted butter on the dough
  9. Sprinkle the green onions on the top
  10. Sprinkle some cheese and fold the dough then brush some butter before completely folding.
  11. Heat the pan and pour olive oil then brush until even
  12. Then put the dough with the filling on the pan and brush some oil on the top. Fry for 2 minutes on each side until golden brown. The Healthy Vegan Martabak is ready to serve!
