Easy Vegan Gravy Recipe

It’s part 2 of our festive foodie holiday recipes, and we’re bringing you the perfect partner for our delicious nut roast – plant-based gravy! 

No roast or Thanksgiving meal is quite complete without it.

Here’s What You’ll Need

(makes 2 cups total)

1 tbsp olive or avocado oil
1 onion, fine dice
1 clove of garlic, minced (optional)
1 cup mushrooms, sliced
1 medium potato, boiled
2 tbsp tamari or coconut aminos
8 oz unsweetened nut milk of choice
1/2 tsp himalayan salt
1/4 tsp black pepper powder

DIRECTIONS:

1. Clean the potato and peel the skin. Boil in water until potato is cooked/soft enough for blending

2. While potato cooks, saute garlic and onion in the oil on low heat until translucent

3. Add in the mushrooms and continue to saute on low heat

4. Once finished add all ingredients into a high speed blender minus the unsweetened nut milk of choice. Blend on low/medium and slowly add milk in small increments until desired consistency is reached and you can increase the speed of the blender.

5. Be sure to blend on high until a very creamy consistency is reached.

 

Enjoy with vegan/plant-based mashed potatoes a sprinkle of parsley and maybe some vegan butter. 🙂
