Chocolate Banana Pancake Recipe

These gluten-free, oil-free, refined sugar-free, and guilt-free Chocolate Banana Pancake recipe hits all the right spots.

Here’s What You’ll Need

1 very ripe maduro (sweet plantain)

1 1/2 tbsp coconut oil

1 1/2 tbsp agave or coconut nectar

2 tsp baking powder

1/4 tsp himalayan salt

8 – 16 oz of plant milk of choice

2 cups oat flour

– –

1/4 cup cacao nibs

DIRECTIONS:

  1. Blend all ingredients in a high-speed blender minus the cacao nibs. Blend until creamy and incorporated.
  2. Pulse in the cacao nibs last so they still remain chunky.
  3. Use a 1/3 measuring cup to pour pancake batter onto a non-stick pan and cook on low heat until the edges of the pancake begin to bubble. Flip the pancake to cook another couple of minutes until complete.
