Butternut Bliss Bowl

Our easy recipe will take your home cooking game to the next level. It’s a celebration of fall flavors, with roasted butternut squash, crispy quinoa and tempeh, and a whole lot of yum.

With every spoonful, you’ll discover the warmth of roasted butternut squash and a symphony of seasonal flavors.

Here’s What You’ll Need

Ingredients:

500 gr butternut squash

200 gr tempeh

1/2 cup of quinoa

3–4 cup kale

1/2 cup red onion

2 tbsp of black sesame seeds

3.5 oz mandarin juice for marinade

2.5 oz mandarin juice for dressing

1 lime juice

2 tbsp maple syrup

1 tbsp tahini

1 tsp mustard

1 tsp garlic powder

1 tsp red pepper flakes

salt, pepper to taste

DIRECTIONS:

  1. Cut tempeh into small cubes. 
  2. Mix together mandarin juice, one tablespoon of maple syrup, garlic powder, red pepper flakes, salt, and pepper in a bowl and add tempeh. Marinade for at least 30 minutes.
  3. Preheat oven to 200°C.
  4. Peel then cut butternut squash into small cubes and arrange them on one side of a baking tray in a single layer. Season with salt and pepper.
  5. Place tempeh on the baking tray. Bake tempeh and pumpkin for 25-30 minutes.
  6. Meanwhile cook quinoa in slightly salted water.
  7. For the dressing, combine tahini, one tablespoon of maple syrup, mandarin juice, lime juice, mustard, and black pepper. Add water if too thick.
  8. Place kale leaves in a large bowl with the dressing and massage them together for 2-3 minutes.
  9. Add cooked quinoa, baked tempeh and butternut squash, sesame seeds, and mix well together. Serve warm or cold. Enjoy!
