Almond Pulp Granola Bars Recipe

Well, put your leftover pulp to use with this delicious, nutrient-rich homemade Almond Pulp Granola Bar recipe. 

These are full of flavor, are vegan, gluten-free, dairy-free, and oil-free!

Here’s What You’ll Need

– 1/2 cup + 1 tbsp of unrefined liquid sweetener of choice; agave, coconut nectar, maple syrup etc.

– 1 cup + 1 tbsp of nut or seed butter of choice

– 1 cup almond pulp

– 1 cup rolled oats

– 1 cup almonds, chopped

– 1 cup coconut flakes

– 1 cup brown rice crisps

– 2 tsp vanilla extract

– 1/2 tsp cinnamon powder

– 1/2 tsp maca powder

– 1/2 tsp Himalayan salt

DIRECTIONS:

  1. Preheat the oven to 350 degrees F. Line a large baking sheet with parchment paper.
  2. In a large mixing bowl combine almond pulp, rolled oats, chopped almonds, coconut flakes, and brown rice crisps. Mix together well.
  3. Spread on the baking sheet and bake for 10 minutes.
  4. Remove from the oven and allow time to cool completely.
  5. Combine butter, liquid sweetener, vanilla, spices, and salt in a bowl and mix well.
  6. Add the dry and wet ingredients together in a large mixing bowl. Add an extra tbsp of butter if needed.
  7. Line an 8×8 inch dish with parchment paper. Firmly press down the mixture and spread it evenly across the bottom.
  8. Freeze for one hour.
  9. Remove from the fridge and when soft enough, cut into individual granola bars and store in an airtight container in the fridge.
