Zingy Bean Toast

Here’s What You’ll Need

INGREDIENTS:

  • 2 Slices Sourdough Bread
  • 1 cup Cannellini Beans
  • 1/4 cup Tomato Paste
  • 1 tbsp Tahini
  • 2 tbsp Water
  • 1 tbsp Lemon Juice
  • 1/2 tbsp Tamari
  • 1/4 tsp Curry Powder
  • 1/4 tsp Chili Flakes
  • 1/4 tsp Black Pepper, ground
  • 1 tbsp Parsley, chopped (garnish)

Directions:

  1.  In a bowl, mix the tomato paste, tahini, lemon juice, chili flakes, black pepper, curry powder, tamari, and water, adding the beans at the end. 
  2. Meanwhile, place the 2 slices of sourdough bread in the toaster.
  3. Place the mix from the bowl in a pan and cook it at medium heat for around 5 minutes.
  4. Spread the bean mix on top of the toasted bread, sprinkling fresh parsley as a garnish.
  5. Enjoy!
