Here’s What You’ll Need

Ingredients:

  • 1 1/2 cup baby arugula
  • 1/4 cup red onion, sliced
  • 1/4 cup dates, chopped
  • 2 tbsp almonds
  • 2 tbsp pecans
  • 1/4 cup fresh mint leaves
  • 2 oranges, peeled and sliced
  • 2 tangerines, peeled and sliced
  • 2 tbsp coconut flakes

Dressing:

  • 2 tbsp olive oil
  • 2 tbsp ACV
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 3 tbsp orange juice

DIRECTIONS:

  1. Place the almonds and pecans in the food processor for 30 sec.
  2. Place the rest of the ingredients in a bowl, then add the almonds and pecans.
  3. For the dressing, whisk all the ingredients together and then drizzle onto the salad.
