Tropical Parfait

Layered with juicy, chopped mango and pineapple, and topped with the tangy pop of passion fruit seeds, this parfait is a tropical explosion in every bite. Crunchy walnuts add a satisfying texture and a boost of healthy fats. Then add some indulgent creamy coconut yogurt, a dairy-free delight that’s rich in probiotics and perfect for a refreshing base. Sweetened with a touch of honey, it offers the perfect balance of flavor and health.

Here’s What You’ll Need

Ingredients:

  • 1  cup Coconut Yogurt
  • 2 tbsp Honey
  • 1/4 cup Mango, Chopped
  • 1/3 cup Pineapple, Chopped
  • 3 tbsp Passion Fruit 
  • 1/4 cup Walnuts

DIRECTIONS:

  1. Place the walnuts in a food processor to crush for 15 sec.
  2. In a jar, start placing the chopped mango as a base for the parfait.
  3. Add 3 tbsp of coconut yogurt for the next layer.
  4. Layer in the rest: half of the pineapple, then coconut yogurt, crushed walnuts, coconut yogurt again, the other half of pineapple, and another layer of coconut yogurt.
  5. Add the passion fruit as a topping and lastly drizzle the honey on top. You can also sprinkle some crushed walnuts to decorate.
