Strawberry Cream "Pie" Cup

This No-Bake Strawberry and Cream Pie is light, refreshing, and super easy to make.

And the good thing is you don’t even have to turn on your oven!

Just remember it’s super important to allow at least 4 hours for this pie to set in the refrigerator before serving.

It will be worth the wait!

Here’s What You’ll Need

Bottom Layer Ingredients:

– 2 tbsp coconut oil

– 1 1/2 tbsp maple syrup

– 1 cup almond meal

– 1/8 tsp Himalayan salt

Top Layer Ingredients:

– 3/4 cup coconut milk

– 1/4 cup agave

– 1/2 tsp vanilla extract

– 1 cup strawberries

– 1 tbsp agar flakes

DIRECTIONS:

BOTTOM LAYER:

  1.  Whisk together in a bowl to combine. Transfer to cups as the bottom layer.

TOP LAYER:

  1. Combine coconut milk and agar flakes in a saucepan over medium-high heat. Bring to a boil.
  2. Whisk and lower heat to a simmer. Occasionally stir until flakes are dissolved, approximately 5 minutes.
  3. Blend strawberries with agave and vanilla in a high-speed blender.
  4. Add the coconut milk. Blend until creamy and smooth.
  5. Pour the mixture over the bottom layer in the cup(s).
  6. Place in the fridge and allow at least 4 hours to set.
  7. Optional to serve with coconut whip and fresh strawberries.
