Spud-tastic Pesto Pizza

Here’s What You’ll Need

Ingredients:

Potato crust:

2 cups mashed potato

2 tbsp tapioca flour

1 tbsp ground flaxseed

1 tsp garlic powder

1 tsp onion powder

1/2 tsp Himalayan salt

1/2 tsp baking powder

1/2 cup strawberry fresh

 

Topping:

Pesto spread

Sliced fresh tomatoes

Slice red onions

Vegan mozzarella

 

 

Mashed Potato:

3/4 cup Almond Milk

2 tbsp Butter

1/4 cup Tapioca FLour

1/4 tsp Garlic Powder

1/4 tsp Onion Powder

1/2 tsp ground Black pepper

DIRECTIONS:

  1. Mix mashed potato ingredients together in a bowl until smooth
  2. Incorporate potato crust ingredients
  3. Add the resulting dough onto a baking sheet, not too thick or too thin
  4. Preheat oven to 375 degrees Fahrenheit and bake for 30 minutes
  5. Spread a layer of pesto onto the potato crust
  6. Add slices of fresh tomatoes and red onions over the pesto
  7. Sprinkle the vegan mozzarella
  8. Bake again for 10- 15 minutes
  9. Top with fresh basil
  10. Slice and serve
