Spinach Fruit Salad

This colorful Spinach Fruit Salad is bursting with juicy fruits, crispy greens, and a hint of grilled pineapple goodness, balanced perfectly with fresh herbs and a crunchy, nutty finish, and a little extra pop of fun from some gorgeous seeds and microgreens sprinkled on top. 

It’s the kind of dish that’ll make you feel like you’re on a sunny picnic, no matter what time of year it is!

 

Here’s What You’ll Need

INGREDIENTS:

Salad Ingredients:

  • 2 cups, spinach
  • 1/2 cup, edamame
  • 1 cup, strawberries, halved
  • 1/2 cup, pineapple halves, grilled
  • 1/8 cup, fresh mint leaves
  • 1/8 cup, fresh basil leaves
  • 1/8 cup, walnuts, toasted, chopped
  • 2 tbsp, poppy seeds, garnish
  • 1 tbsp, sunflower seeds, garnish
  • 2 tbsp, microgreens, garnish

Dressing Ingredients:

  • 3 tbsp, lemon or lime juice
  • 1 tbsp neutral oil
  • 2 tsp, agave
  • 1 tsp, tahini
  • 1 cup strawberries
  • 1/8 tsp Himalayan salt
  • 1/8 tsp black pepper powder

DIRECTIONS:

  1. Grill the pineapple until charred
  2. Toss the spinach, edamame, strawberries, pineapple, mint, basil, and walnuts together.
  3. For the dressing, whisk or blend ingredients together, minus the oil. Incorporate the oil last to emulsify.
  4. Drizzle the salad dressing.
  5. Sprinkle with sunflower and poppy seeds.
  6. Garnish with microgreens.
