Here’s What You’ll Need

Ingredients:

  • 1 cup Kale
  • 2/3 cup Carrots, Shredded
  • 2/3 cup Red Cabbage, Chopped
  • 1/3 Cannellini Beans, Canned and Rinsed 
  • 1/4 cup Almonds, Chopped

Dressing:

  • 2 tbsp Apple Cider Vinegar
  • 2 tbsp Olive Oil
  • 2 tbsp Lemon Juice
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 tbsp Dijon Mustard

DIRECTIONS:

  1. Chop the kale and red cabbage. Then shred the carrots. 
  2. Place everything in a salad bowl.
  3. Make the dressing by whisking all the ingredients together.
  4. Add the dressing to the salad or serve on the side.
