Green Edamame Salad with Sweet n Spicy Peanut Cream

This easy edamame salad is quick, balanced, and filling. 

If you’re looking for a plant-based salad to add to your menu that’s anything but bland and boring, this one’s for you!

Here’s What You’ll Need

Salad Ingredients:

– 1/2 cup, kale, rough shred 

– 1/2 cup, green cabbage, thin mandolin

– 1/2 cup, red cabbage, thin mandolin

– 1/4 cup, carrot, matchsticks

– 1/2 cup, edamame, cooked

– 1/4 cup, cucumber, diced

– 1/8 cup, parsley, whole leaf

– 1/8 cup, peanuts, toasted, chopped

– 2 tbsp, black sesame seeds, sprinkle

Dressing Ingredients:

– 1 tbsp, rice vinegar

– 1 tbsp, sesame oil

– 1 tbsp, lime juice

– 1 tsp, lime zest

– 2 tbsp, agave or coconut nectar

– 1 tbsp, tamari

– 1/4 cup, peanut butter

– 1 tsp, ginger, grated

– 1 clove garlic, grated

– 1/8 tsp, cayenne pepper powder

– 1/8 cup, parsley, whole leaf

– 1/8 cup, peanuts, toasted, chopped

– 2 tbsp, black sesame seeds, sprinkle

DIRECTIONS:

  1. Whisk all ingredients together to combine.
  2. Add in 1 tbsp of water at a time if needed to reach desired consistency of choice.
