Here’s What You’ll Need

Ingredients:

  • 3 cups Water
  • 1 cup Vegetable Stock
  • 1/4 cup Onions
  • 1/2 cup Coconut Creme
  • 2 tbsp Feta Cheese
  • 1/8 tsp Black Pepper Powder
  • 1 tbsp Olive Oil
  • 1 ½ cup Butternut Squash

DIRECTIONS:

  1. In a deep pot, add the water, butternut squash, and onions. Cook over medium heat for 20 minutes or until the butternut squash is well cooked through.
  2. Transfer the mixture to a blender and add the coconut cream. Blend for 20 seconds or until well combined.
  3. Put the mixture back into the pot and cook for 2 more minutes, then remove and serve. 
  4. Add the feta cheese and sprinkle the black pepper on top.
