Here’s What You’ll Need

Ingredients:

  • 1 1/2 cup Kale, chopped
  • 1/2 cup Cucumbers, diced
  • 1/2 cup Apples, diced
  • 1/2 cup Chickpeas, rinsed
  • 1/4 cup Feta Cheese

Vinaigrette:

  • 1 1/2 tbsp Apple Cider Vinegar
  • 1 1/2 tbsp Olive Oil
  • 1 tsp Dijon Mustard
  • 1/4 tsp Himalayan salt
  • 1/4 tsp Black pepper

DIRECTIONS:

  1. Chop the kale and dice the cucumbers and apples.
  2. In a small bowl, make a vinaigrette by mixing the ingredients with a whisk. 
  3. In a medium bowl or plate, start placing all the salad ingredients in first, topping it with the feta cheese, and finally add the vinaigrette.
