Here’s What You’ll Need

Panna Cotta Ingredients:

– 2 14 oz cans of coconut milk

– 1 tsp, vanilla extract

– 2 tbsp agave

– 1 tsp agar agar powder

– 1/16 pinch of Himalayan salt

Frozen Berry Compote Topping Ingredients:

– 1/2 cup, coconut water

– 1 cup frozen berries of choice

– 1 tsp, lemon juice

– 1 1/2 tbsp agave

DIRECTIONS FOR PANNA COTTA:

  1. Add coconut milk and sweetener to a saucepan and set to medium/high heat. Bring to a boil and whisk in the agar agar powder to incorporate. 
  2. Continue boiling for 3 minutes, whisking, and making sure the mixture doesn’t spill over.
  3. Add the vanilla extract to incorporate. 
  4. Pour the mixture into individual-sized molds, serving bowls, or ramekins and place in the refrigerator to set for approximately 1 hour.
  5. Remove the panna cotta from the bowl, place on a serving platter, and serve with the berry topping.
  6. Heat up a skillet and fry until golden brown on either side.
  7. Serve with fixings and a gluten-free bun or large lettuce leaves.

DIRECTIONS FOR BERRY TOPPING:

  1. Add berries, sweetener, lemon, salt, and water to a medium saucepan.
  2. Cook uncovered for approximately 15 minutes until berries have broken down and the mixture has thickened some.
  3. Serve on top of the panna cotta.
