The Lentil Walnut Mushroom Burger!🍄🍔

Here’s What You’ll Need

Ingredients:

– 1 – 2 tbsp of avocado or coconut oil

– 1 clove garlic, minced

– 2 1/2 tbsp, tamari

– 2 tbsp, apple cider vinegar

– 1/2 white onion, diced

– 5 cups, shiitake or button mushrooms, diced

– 1 cup, walnuts, 

– 2 tbsp flax seeds

– 1/3 cup, oats OR try experimenting with psyllium husk powder (as the binder)

– 1 tbsp, cumin powder

– 1 cup, lentils (cooked)

DIRECTIONS:

  1. Saute the onion in oil on low heat until the onion becomes translucent.
  2. Add in the minced garlic. Stir to coat.
  3. Add in the mushrooms and continue to stir frequently until the mushrooms become brown and golden but not burned.
  4. Stir in the cumin powder, acv and tamari to coat. Remove from the heat. 
  5. In a food processor with S-blade, process the walnuts until a fine meal forms.
  6. In a large mixing bowl, mash up the cooked lentils slightly and stir in the flax seeds, walnut meal, oats or psyllium husk powder and the sauteed onion, mushroom mixture.
  7. Once everything is fully incorporated, allow the mixture some time to sit in the fridge.
  8. Remove and form into hamburger sized patties.
  9. Heat up a skillet and fry until golden brown on either side.
  10. Serve with fixings and a gluten-free bun or large lettuce leaves.
