Red Velvet Cake Balls

Here’s What You’ll Need

Ingredients:

– 1 tsp, vanilla extract

– 1 tbsp coconut cream or full-fat coconut milk

– 1 cup, dates

– 1/4 cup, almond flour

– 1 tbsp, coconut flour

– 2 tbsp cacao powder

– 2 tbsp, beetroot powder

– – 

additional beetroot powder or cacao powder for rolling.

DIRECTIONS:

  1. Add dates to a food processor with S-blade and process until a date ball forms. Remove the ball and set it off to the side.
  2. Next add flours, cacao and beetroot powder, vanilla and agave. Process until a tacky dough forms.
  3. Add coconut cream only if dough appears dry.
  4. Begin to feed the date ball back in while the machine is running, bit by bit until completely combined.
  5. Scoop out 1 tbsp amounts and roll into little bite-sized balls. 
  6. Optional to roll in cacao or beetroot powder as you see fit.
  7. Store on parchment paper inside of a covered container for up to 2 weeks in the refrigerator.
