Chocolate Pistachio Mint & Strawberry Rose Balls

Melt your vegan February heart with these Chocolate Pistachio Mint & Strawberry Rose Balls 😍

Built on a different wholesome foundation of oats, date paste, raisins, and of course – pistachios!

Here’s What You’ll Need

Ingredients:

– 1/2 tsp, vanilla extract

– 1 drop peppermint extract

– 1 tsp, rose water

– 1/2 cup raisins, divided

– 1 cup, date paste, divided

– 2 cups, oats

– 1/4 cup, pistachios

– 1/2 cup, freeze-dried strawberries

– 3 tbsp, cacao powder

– 1/16 tsp, pinch of himalayan salt

DIRECTIONS:

  1. Divide the oats equally and place in two large mixing bowls.
  2. In a food processor, process the pistachios until a crumbly consistency is achieved. 
  3. Remove and set aside in a bowl.
  4. Repeat with the freeze dried strawberries. Remove and set aside in a bowl.
  5. Add to the pistachios, the date paste, 1/4 cup raisins, cacao powder, vanilla and peppermint extract with a pinch of the salt. Mix well.
  6. Use a tbsp spoon to roll into bite sized balls.
  7. To prepare the rose balls, add the other divided portions of the date paste, raisins, rose water and pinch of salt to the freeze dried strawberries. Mix well.
  8. Use a tbsp spoon to roll into bite sized balls. 
  9. Store in an airtight sealed container lined with parchment paper until ready to serve.
