Creamy Apple Cheesecake Bars

These Creamy Apple Cheesecake Bars are cream filled with citrusy apple butter 😋

They are absolutely irresistible!

Here’s What You’ll Need

Apple Butter: (prepare first)

– 4 oz, purified water

– 1 tbsp, lemon juice or acv

– 6 medium apples, peeled, cored, chopped

– 2 – 3 dates

– 1 tsp, cinnamon powder

– 1/2 tsp, ginger powder

Crust:

– 1 cup, oats

– 1 cup, almonds

– 1/4 tsp, himalayan salt

– 2 tbsp agave or maple syrup

– 4 – 5 tbsp, coconut oil

Filling:

– 3/4 cup, apple butter (see above)

– 2 oz, agave or maple syrup

– 3 tbsp lemon juice

– 2 tsp, lemon zest

– 1 cup, coconut cream

– 1 cup, cashews soaked

– 1 1/2 tbsp arrowroot or cornstarch

– 1/2 tsp, cinnamon powder

DIRECTIONS FILLING:

  1. In a large pot add; chopped apples, dates, cinnamon, ginger, water, and lemon juice or acv.
  2. Cover and cook over medium heat for 20 – 30 minutes, until apples become so tender they smash easily with a fork. 
  3. Remove from heat so you can mash or blend the mixture safely.
  4. Once the apple sauce consistency is created, return to the stove top on low-medium heat for 1 – 2 hours, stirring every 10 minutes, until the sauce thickens and caramelize. 
  5. When butter is thick and rich in color, it is complete. Reserve for the cheesecake recipe below. Allow the butter to fully cool before using.
  6. Any leftover can keep in the refrigerator for up to 1 – 2 months.

DIRECTIONS CRUST:

  1. To prepare the crust; add oats, almonds and sea salt to a food processor with S-blade and mix until a fine meal is achieved.
  2. Stream in the liquid sweetener and coconut oil to combine. Don’t over process. 
  3. Transfer to a silicone pie mold or baking sheet lined with parchment paper. Press the crust down firmly and evenly.
  4. Bake crust for 15 minutes at 375 F. Bake 4 – 6 minutes more until the edges are golden brown and there is some browning on the surface. Remove from the oven to cool and turn the oven down to 350 degrees.
  5. Rinse the soaked cashews and add to a high speed blender
