Butternut Squash Hummus Mushroom Toast

We present you: butternut squash hummus mushroom toast!

The butternut squash hummus is also the perfect dip to have on hand for a week of healthy snacking or for taking along to parties 😉

Here’s What You’ll Need

Butternut Squash Hummus Ingredients:

– 3 – 4 tbsp olive oil

– 1/3 cup, tahini

– 2 tbsp, lemon juice

– 1 cup, cubed butternut squash

1 15 oz can of chickpeas, rinsed

– 1 clove garlic

– 1/2 tsp, cumin powder

– 1/4 tsp, cinnamon powder

– 1/4 tsp, smoked paprika powder

– 1/4 tsp, himalayan salt

– 1/4 tsp, black pepper powder

– 1/2 tsp, nutmeg powder

– 1/8 tsp/pinch, himalayan salt

Mushroom Ingredients

– 1 tsp, tamari or liquid aminos

– 1/2 cup, mushrooms, sliced

– 1/4 tsp, black pepper powder

Toast Ingredients:

– 2 slices of sourdough or gluten-free bread, toasted

– 1/4 cup, butternut squash hummus toast

– 1/4 cup, mushrooms

– 2 tbsp, microgreens, garnish

DIRECTIONS FOR THE HUMMUS :

  1. Preheat the oven to 400 degrees F.
  2. Add the cubed butternut squash and garlic clove, unpeeled to a baking sheet.
  3. Bake for 15 – 20 minutes, until squash is tender to touch with a fork. 
  4. Remove from the oven and add to a food processor with S-blade along with all the other ingredients. Remove the peel from the roasted garlic before adding. 
  5. Process and puree until creamy and smooth.
  6. Any leftovers will keep in the refrigerator for a maximum of 4 – 5 days.

DIRECTIONS FOR THE MUSHROOM:

  1. Add mushrooms to a saucepan over low-medium heat and add the gluten-free soy sauce of choice.
  2. Sprinkle the black pepper powder or cracked black pepper.
  3. Sauté until mushrooms are crisp and golden on either side.
  4. Remove from the heat and add to the toast below.

DIRECTIONS FOR THE TOAST:

  1. Toast the bread of choice
  2. Spread the hummus
  3. Add the mushrooms my piling them slightly to create some height to the toast
  4. Garnish with microgreens or other fresh greens or herbs of choice
