Mushroom Avocado Toast

It’s hard to beat the quick, easy, and savory goodness of this breakfast – Mushroom Avocado Toast!

It’s a snack, but it’s also perfect for breakfast with greens.

Here’s What You’ll Need

Ingredients:

– 2 slices gluten-free bread, toasted

– 1/2 – 3/4 ripe avocado

– 1/4 tsp, red chili flakes, optional

– 1/2 tsp, nutritional yeast, optional

 

Mushrooms:

– 2 tbsp avocado oil

– 3 cups, mushrooms, sliced

– 1/2 tsp, dried thyme

– 1/4 tsp, garlic powder

– 1/8 tsp, pinch of himalayan salt

Overnight Oats Ingredients:

– 3/4 cup plant milk of choice

– 1 tbsp ground flax seeds

– 1 tbsp chia seeds

– 1/2 cup rolled oats

– 1 tsp cinnamon powder

DIRECTIONS:

  1. Add bread to a toaster
  2. Use a skillet and add 1 tbsp of oil or butter of choice.
  3. Saute mushrooms on low heat. 
  4. Stir in thyme, garlic powder and salt to combine. 
  5. Mushrooms are complete when golden and crisp. 
  6. Add chopped avocado to a bowl and lightly mash. Leave chunky.
  7. Add the avocado mash to the toast. Spread but also build the mash to provide some height to the toast.
  8. Add the mushrooms on top, predominantly in the center for additional height. 
  9. Optional to sprinkle with red chili flakes and/or nutritional yeast.
  10. Enjoy immediately.
