Pumpkin Pie Overnight Oats

Here’s What You’ll Need

Ingredients:

– 4 oz, plant milk of choice

– 1 1/2 tbsp, maple syrup, honey or coconut nectar

– 1 tsp, vanilla extract

– 1/2 cup, pumpkin puree

– 1/2 tbsp almond butter

– 1 tbsp, chia seeds

– 1/2 cup, oats

– 3/4 tsp pumpkin pie spice

Overnight Oats Ingredients:

– 3/4 cup plant milk of choice

– 1 tbsp ground flax seeds

– 1 tbsp chia seeds

– 1/2 cup rolled oats

– 1 tsp cinnamon powder

Toppings:

– 1/2 cup, pecans

– 1 tbsp honey, maple syrup or coconut nectar

– 1 tsp, cinnamon powder

– 1/4 cup, coconut yogurt, optional

 – 2 tbsp manggo

– 1 tbsp fresh blueberry

Overnight Oats Ingredients:

– 3/4 cup plant milk of choice

– 1 tbsp ground flax seeds

– 1 tbsp chia seeds

– 1/2 cup rolled oats

– 1 tsp cinnamon powder

DIRECTIONS:

  1. Whisk plant milk, puree, vanilla, nut butter, spice and sweetener until fully combined.
  2. Whisk in the chia seeds to combine. Avoid any clumps from forming.
  3. Add oats and stir to combine.
  4. Add to a preferably glass vessel and cover. Place in the refrigerator and allow 30 minutes to a maximum of overnight to set.
  5. Serve with optional toppings listed above.
