Blueberry Cheesecake Overnight Oats

“I don’t like blueberry cheesecake,” – said no one, ever.  

That’s how these overnight oats came about, we wanted to transform a traditionally naughty treat into something healthy. 

Trust us, it’ll be your customers new favourite breakfast snack.

Here’s What You’ll Need

Overnight Oats Ingredients:

– 3/4 cup plant milk of choice

– 1 tbsp ground flax seeds

– 1 tbsp chia seeds

– 1/2 cup rolled oats

– 1 tsp cinnamon powder

Overnight Oats Ingredients:

– 3/4 cup plant milk of choice

– 1 tbsp ground flax seeds

– 1 tbsp chia seeds

– 1/2 cup rolled oats

– 1 tsp cinnamon powder

Cheesecake Layer:

– 6 oz, purified water

– 1 tbsp, lemon juice

– 1/2 tbsp agave

– 1/4 tsp, vanilla extract

– 1/2 cup, cashews, soaked

– 1/8 tsp, himalayan salt

Overnight Oats Ingredients:

– 3/4 cup plant milk of choice

– 1 tbsp ground flax seeds

– 1 tbsp chia seeds

– 1/2 cup rolled oats

– 1 tsp cinnamon powder

Blueberry Layer Ingredients:

– 1 tsp, lemon zest

– 1 tbsp chia seeds

– 1 cup thawed or fresh blueberries

– 1 tbsp agave

Overnight Oats Ingredients:

– 3/4 cup plant milk of choice

– 1 tbsp ground flax seeds

– 1 tbsp chia seeds

– 1/2 cup rolled oats

– 1 tsp cinnamon powder

OVERNIGHT OATS DIRECTIONS:

  1. Whisk milk together with cinnamon powder. 
  2. Mix oats with chia seeds and ground flax until combined.
  3. Pour the cinnamon milk over the oat mixture and stir well with a fork to aerate and incorporate. Try to avoid any clumps from forming.
  4. Place in the refrigerator to set for a minimum of one hour.

 

CHEESECAKE LAYER DIRECTIONS:

  1. Blend all ingredients in a high speed blender until smooth and creamy. 
  2. Pour over the overnight oats when ready to serve as the second layer.

BLUEBERRY LAYER DIRECTIONS:

  1. Heat blueberries in a saucepan for 15 minutes. 
  2. Allow mixture to cool and mash the berries with a fork.
  3. Stir in the chia seeds to incorporate.
  4. Add lemon zest prior to serving.
  5. Add the blueberry layer as the final layer when serving the overnight oats.
