Blueberry Banana Muffins

Not too sweet and delightfully moist, these Banana Blueberry Muffins are the perfect breakfast treat to add to your menu.

Here’s What You’ll Need

– 1/2 cup, coconut yogurt

– 3 tbsp agave or coconut nectar

– 1 tbsp lemon juice

– 1 tbsp lemon zest

– 1 tsp baking soda

– 2 medium ripe bananas

– 2 1/2 cups, oats blended

– 2/3 cup, blueberries thawed or fresh

DIRECTIONS:

  1. Add oats to a high speed blender and process until a fine flour forms.
  2. Pre-heat oven to 350 degrees F. Lightly grease muffin tray if not using a silicone muffin mold.
  3. Mash bananas in a mixing bowl.
  4. Add in yogurt, sweetener, lemon juice and zest. Whisk to combine.
  5. Mix in the oat flour and baking soda. 
  6. Gently fold in the blueberries.
  7. Evenly distribute the batter into muffin molds. 
  8. Bake 15 – 18 minutes. Insert a skewer or toothpick after 15 minutes to check. 
  9. Once cooled, remove from tray and allow to cool further on a wire rack.
