Gazpacho Salad

Here’s What You’ll Need

1/4 cup, cherry tomatoes, halved

1/4 cup green beans

1/4 cup, cucumber, diced with skin

1 tbsp scallions

1/8 cup, kalamata olives

Vinaigrette:

– 2 tbsp extra virgin olive oil

– 1 tbsp sherry vinegar

– 1/4 tsp himalayan salt

– 1/4 tsp black pepper powder

DIRECTIONS:

1. Whisk the vinaigrette together and toss with the vegetables. Serve chilled.
