Chocolate Dipped Almond Shortbread Cookies

The buttery crumbly shortbread texture we all love is perfect to satisfy those cookie cravings. 

Whether your customers want a breakfast pick-me-up, or an afternoon snack, these cookies are a delicious and indulgent treat without being overly sweet.

Here’s What You’ll Need

Cookie Ingredients:

– 1/4 cup, agave or maple syrup

– 3 tbsp, coconut butter or coconut oil

– 2 cups, almond flour

Chocolate Dip Ingredients:

– 1/4 cup, coconut oil

– 1/4 cup, agave or maple syrup

– 1/4 cup, cacao powder

Optional garnishes:

– dried rose petals

– chopped pistachios

– flakey sea salt

DIRECTIONS:

  1. Preheat oven to 350 degrees F.
  2. Line a baking sheet with parchment paper.
  3. Add all ingredients to a mixing bowl and mix until combined.
  4. Form cookie dough into a rough ball.
  5. On a clear surface or between two pieces of parchment paper, roll out the dough so it’s about 8 – 10mm thick. Use a 5 cm cookie cutter to cut cookies into the dough.
  6. Bake cookies for 12 – 15 minutes or until cookies are slightly golden.

DIRECTIONS TO GARNISH:

  1. Whisk all ingredients together to combine.
  2. Dip half of each cookie in the chocolate sauce and add garnishes if desired.
  3. Add to a parchment lined baking sheet and place in the refrigerator so that the chocolate can set.
