Affogato with Date Caramel Drizzle

Here’s What You’ll Need

Ingredients:

– 2 scoops dairy-free ice cream of choice

– 2 shots of espresso (1 oz each)

– 2 tbsp caramel sauce (see below)

– 1 tsp, cacao nibs

– sprinkle of coarse flake sea salt

Caramel Sauce Ingredients:

– 1/2 cup coconut cream

– 1/2 cup coconut nectar

– 1/4 tsp vanilla extract

– 1 cup dates

– 1/8 tsp Himalayan salt

DIRECTIONS:

  1. Scoop ice cream into a pretty mug.
  2. Add the shots of espresso.
  3. Drizzle the caramel sauce.
  4. Garnish with a sprinkle of cacao nibs and coarse sea salt flakes.

CARAMEL SAUCE:

  1. Process all ingredients in a high-speed blender until creamy and smooth.
