Spinach Fruit Salad

Spinach fruit salad is our ultimate spring treat.

Fresh strawberries, and pineapple, pair amazingly well with walnuts and other yummy ingredients 🤤

Here’s What You’ll Need

Salad Ingredients:

– 2 cups, spinach

– 1/2 cup, edamame

– 1 cup, strawberries, halved

– 1/2 cup, pineapple, halves, grilled

– 1/8 cup, fresh mint leaves

– 1/8 cup, fresh basil leaves

– 1/8 cup, walnuts, toasted, chopped

– 2 tbsp, poppy seeds, garnish

– 1 tbsp, sunflower seeds, garnish

– 2 tbsp, microgreens, garnish

Dressing Ingredients:

– 3 tbsp, lemon or lime juice

– 1 tbsp neutral oil

– 2 tsp, agave

– 1 tsp, tahini

– 1 cup strawberries

– 1/8 tsp Himalayan salt

– 1/8 tsp black pepper powder

DIRECTIONS:

SALAD:

  1. Grill the pineapple until charred
  2. Toss spinach, edamame, strawberries, pineapple, mint, basil, and walnut together.
  3. Drizzle the salad dressing.
  4. Sprinkle with sunflower and poppy seeds.
  5. Garnish with microgreens.

DRESSING:

  1. Whisk or blend ingredients together minus the oil.
  2. Incorporate the oil last to emulsify.
