Raw Vegan Carrot Cake Recipe

Because we carrot about you, we’ll show you how to make the raw vegan carrot cake of your dreams! 

It’s tender, it’s moist, it’s naturally sweetened, need we say more? 

Here’s What You’ll Need

Cake Ingredients:

– 2 tsp vanilla extract

– 2 cups carrot, shredded fine

– 2 cups dates

– 1/4 cup raisins

– 2 1/2 cups walnuts

– 1/2 cup coconut flour

– 1 1/4 tsp cinnamon powder

– 3/4 tsp ginger powder

– 1 pinch nutmeg powder

– 1/4 tsp Himalayan salt

Icing Ingredients:

– 1/2 cup coconut cream

– 2 tbsp lemon juice

– 3 tbsp maple syrup

– 1 tsp vanilla extract

– 1 1/4 cup cashews, soaked

DIRECTIONS:

CAKE:

  1. Add dates to a food processor and process until a big date ball forms. Set aside.
  2. Add walnuts,  vanilla, salt, and spices. Blend until a semi-fine meal is achieved. 
  3. Add dates back in bit by bit as the processor is running followed by the shredded carrot. Pulse to incorporate. Do not over blend.
  4. Transfer to a large bowl and add coconut flour and raisins to combine. 
  5. Prepare a springform, cake pan, or 8×8 baking dish with coconut oil or parchment paper. Add the cake mixture and pack it down. 
  6. Add the frosting on top. Freeze for approximately 3 – 4 hours until the icing is set. 

ICING:

  1. Blend all ingredients in a high-speed blender and process until a very creamy consistency is achieved. Chill in the refrigerator until ready to use.
