Pumpkin Oat Pancakes

These deliciously fluffy (& healthy!) pumpkin oat pancakes are an absolute game-changer. 

Morning, noon and night – they just seem to perfectly fit any time of day and every mood. 🤩

Here’s What You’ll Need

– 2 oz plant milk of choice

– 1 cup pumpkin puree

– 2 tbsp coconut oil, melted

– 1 tbsp fresh lemon juice

– 4 tbsp maple syrup

– 1 tsp vanilla extract

– 2 tbsp chia egg

– 1 cup oat flour

– 1/2 tsp baking soda

– 1/2 tsp cinnamon powder

– 1/2 tsp ginger powder

– 1/4 tsp nutmeg powder

– 1/4 tsp allspice powder

– 1/2 tsp himalayan salt

Toppings:

– 1/8 cup, coconut yogurt dollop

– 1/4 cup, fresh seasonal fruits of choice

– 1 tbsp hemp seeds, sprinkle

– 2 tbsp walnuts, chopped

– 2 tbsp drizzle of honey or maple syrup

– 1/4 tsp cinnamon powder, sprinkle

DIRECTIONS:

1. Whisk together puree, milk, oil, lemon, sweetener and vanilla.
2. Whisk in the chia eggs.
3. In a separate bowl, combine dry ingredients together.
4. Combine liquid with dry. Allow the batter to sit for about 10 minutes.
5. Heat a preferably cast iron skillet on low-medium heat. Lightly oil the surface with coconut oil.
6. Once the surface of the pan is hot enough to sizzle water, add batter with 1/4 measuring cup.
7. Allow the pancake to cook approximately 3 minutes until the outer edges begin to bubble and brown.
8. Flip and cook for an additional 2 or so minutes.
9. Serve pancakes with toppings listed above.
