Maple Pecan Pumpkin Granola Recipe

There are few ways that can elevate your breakfast menu like a homemade Pumpkin Maple Pecan GRANOLA! 

Yup, you read that right. And yes, it’s even better than it sounds. 

It’s the closest thing you’ll get to happiness in a bowl.

Here’s What You’ll Need

– 1/4 cup coconut oil

– 1/3 cup maple syrup, agave, or coconut nectar (unrefined liquid sweetener of choice)

– 1/3 cup, pumpkin puree

– 3 tbsp, coconut palm sugar

– 3 cups, rolled oats

– 1 1/4 cup, whole pecans

– 1/3 cup, pepitas (pumpkin seeds)

– 3/4 tsp pumpkin pie spice

– 1/4 tsp, cinnamon powder

– 1/4 tsp, Himalayan salt

DIRECTIONS:

  1. Pre-heat oven to 340 degrees F.
  2. Mix oats, nuts, seeds, spices, coconut palm sugar and salt together in a large mixing bowl.
  3. In a small saucepan over medium-low heat, warm coconut oil, liquid sweetener, and pumpkin puree. Whisk to combine.
  4. Pour over the dry ingredients and mix together well.
  5. Spread mixture on one or two parchment lined baking sheets and bake in the oven for 20 – 30 minutes, stirring at the halfway point or if you like a chunkier granola, simply rotate the pans.
  6. The granola should be golden around the 25 minute mark.
  7. Remove from the oven and allow granola to cool.
  8. Transfer to an airtight container.
