Here’s What You’ll Need

INGREDIENTS:

Bottom Layer Ingredients:

  • 2 tbsp coconut oil
  • 1 1/2 tbsp maple syrup
  • 1 cup almond meal
  • 1/8 tsp himalayan salt

Top Layer Ingredients:

  • 3/4 cup coconut milk
  • 1/4 cup agave
  • 1/2 tsp vanilla extract
  • 1 cup strawberries
  • 1 tbsp agar agar flakes

DIRECTIONS:

  1. Whisk together the ingredients of the bottom layer in a bowl to combine. Transfer to cups as the bottom layer.
  2. For the top layer, combine coconut milk and agar flakes in a saucepan over medium high heat. Bring to a boil.
  3. Whisk and lower heat to a simmer. Occasionally stir until flakes are dissolved, approximately 5 minutes.
  4. Blend strawberries with agave and vanilla in a high-speed blender.
  5. Add the coconut milk and blend until creamy and smooth.
  6. Pour the mixture over the bottom layer in the cup(s).
  7. Place in the fridge and allow at least 4 hours to set.
  8. Option: serve with coconut whip and fresh strawberries.
