Fruity Cake

Indulge in a slice of pure bliss with our Fruity Cake, a delightful treat bursting with the natural sweetness of ripe bananas and a blend of mixed dried fruits. This cake is perfectly spiced with a hint of cinnamon, offering a festive, comforting flavor in every bite.

Made with a touch of coconut sugar and a splash of rum essence, the cake boasts a rich and moist texture that’s simply irresistible. The addition of oats gives it a lovely crunch, while a drizzle of honey and a sprinkle of shredded coconut on top add the perfect finishing touch.

 

Here’s What You’ll Need

INGREDIENTS:

  • 2 large Bananas (approximately 230 gr)
  • 1 1/2 oz Vegetable Oil
  • 1/3 cup Coconut Sugar
  • 1 1/8 cup Plain Flour
  • 1 tsp Cinnamon
  • 3/4 cup Mixed Dried Fruits
  • 2 tbsp Oats
  • 1/4 tsp Vanilla Extract
  • 1 tsp Rum Essence
  • 1 tsp Baking Powder

 

Toppings:

  • 2 tbsp Coconut, Shredded
  • 1 tbsp Honey Drizzle

DIRECTIONS:

  1. Preheat the oven at 350°F (180° C). 
  2. In a bowl, add the bananas and the oil and smash it together with a fork.
  3. Add the vanilla extract, coconut sugar, cinnamon, and rum essence. Use a mixer or a wooden spoon to integrate the ingredients.
  4. Add the baking powder and flour. Then lastly add the dried fruits.
  5. Pour the mixture into a mold with parchment paper and sprinkle the oats on top. Then bake in the oven for 25 min.
  6. Place it on a large plate and cut the cake into slices. Sprinkle honey drizzle and shredded coconut on top. 
  7. Enjoy!
