Mediterranean Tostadas

Start with crispy tostadas or toasted tortillas as your base and add a layer of sumptuous homemade hummus. Then top them with a refreshing mix of diced cucumbers, black olives, chopped parsley, and sun-dried tomatoes, and, of course, a zesty summery dressing.

Perfect for a light lunch, snack, or appetizer, our Mediterranean Tostadas are a healthy and delicious way to enjoy the iconic flavors of the Mediterranean!

Here’s What You’ll Need

Ingredients:

  • 4 tostadas (or tortillas toasted in the oven or a pan)
  • 2/3 cup diced Cucumbers,
  • 2 tbsp Black Olives
  • 1 tbsp chopped Parsley
  • 2 tbsp chopped Sundried Tomatoes
  • 1 tbsp Apple Cider Vinegar
  • 2 tbsp Olive Oil
  • 1/4 tsp Himalayan Salt
  • 1/4 tsp Ground Black Pepper

For Hummus:

  • 2/3 cup  rinsed Chickpeas
  • 1 clove chopped Garlic
  • 2 oz Water
  • 1 tbsp Tahini
  • 1/4 tsp Ground Black Pepper
  • 1/4 Himalayan Salt
  • 1 tbsp Lemon Juice

DIRECTIONS:

  1. Chop the cucumbers, black olives, and sundried tomatoes, and place in a small bowl.
  2. Add the oil, apple cider vinegar, salt, black pepper, and lemon juice.
  3. For the hummus, place all the ingredients in a food processor and mix well for about 45 seconds.
  4. Toast the tostadas and spread the hummus on top.
  5. Add 2 generous tablespoons of the Mediterranean vegetable mix on top.
