Herb Polenta Fries

Herb Polenta Fries are just too good to be true. 

Grab your ingredients and get ready to enjoy with your favorite dipping sauce – marinara or pesto!

Here’s What You’ll Need

Ingredients:

– 1 16 oz package of polenta

– 2 tbsp olive or avocado oil

– 1/4 cup, vegan parmesan

– 1 tbsp dried Italian herbs

DIRECTIONS:

  1. Line a baking sheet with parchment paper and preheat the oven to 425 F.
  2. Prepare the polenta and place in a parchment lined 8×8 inch baking dish. Aim for 1/4 – 1/2 inch thick.
  3. Refrigerate for at least 1 hour. 
  4. Remove and cut into rectangular fry shapes and place in a large mixing bowl.
  5. Add oil, salt, and pepper to coat.
  6. Add the vegan parmesan and dried herbs to the coat. 
  7. Space fries evenly on the parchment-lined baking sheet and bake for 30 minutes. Flip halfway through to ensure even browning.
  8. Enjoy with your favorite dipping sauce; marinara or pesto.
