Chickpea "Tuna" Salad Toast

This easy-to-make recipe is perfect for an easy weeknight dinner or on the go quick lunch.

Here’s What You’ll Need

4 tbsp tahini

1 tbsp, mustard

1 cup chickpeas

2 tbsp shallot

2 tsp garlic

4 tbsp onion

1/4 cup, pickled, diced

1/4 cup, tomatoes, finely chopped

1 tbsp fresh dill

1/2 tsp salt

1/4 tsp black pepper powder

– –

2 pieces of sourdough, gluten-free or sprouted bread, toasted

DIRECTIONS:

  1. Whisk tahini together with mustard, garlic, dill, salt and pepper.
  2. In a large mixing bowl, lightly mash the chickpeas.
  3. Whisk all remaining ingredients, vegetables and mustard tahini mixture into the large mixing bowl with the chickpeas. Stir well to incorporate.
  4. Toast the bread.
  5. Add a generous serving of the chickpea tuna to each slice of toast and serve immediately.
