Pepita Butter Toast with Crisp Apples

Here’s What You’ll Need

Pepita Butter:

– 2 tbsp coconut oil, melted

– 2 cups, pepitas/pumpkin seeds

– 1/8 pinch of himalayan salt

Toast:

– 2 slices of gluten-free or sourdough toast

– 1/8 cup of pepita butter spread

– 1/4 cup, sliced apples with skin

– 1 tsp hemp seeds, sprinkle

– 1/4 tsp, cinnamon powder, sprinkle

– 1 tsp honey drizzle, optional

DIRECTIONS:

1. Preheat oven to 320 degrees F.
2. Spread seeds out on a baking tray with a sprinkle of salt and bake for 15 – 18 minutes until the seeds start popping.
3. Add the seeds to a food processor with S-blade and process until a creamy butter forms.
4. Stop every now and then to scrap the butter down the sides. Should take approximately 15 minutes until super smooth and runny.
5. Stream the oil in last to emulsify. Do not over process.
6. Store the butter in a glass sealable jar and store at room temperature.
